In July of 2015 Nokia commissioned Love Catering to create next-generation appetizers to celebrate the launch of their biggest reveal yet: Ozo - the next-generation virtual reality camera. Designed for Hollywood and featuring a retail price north of 5-figures, the Ozo camera allows directors to shoot and review virtual reality programming in real time.
To compliment their forward-thinking technology, Love Catering composed a menu of refined classics. As seen in the gallery below, guests enjoyed beef carpaccio with smoked eggplant jam and crispy shallots. We moved french toast from breakfast to dessert, flash freezing it in liquid nitrogen and finished with brown butter powder and 25-year old maple syrup. Bols Genever cocktails were spherified and served as shots. Finally we crafted a version of poutine inspired by the sea featuring seared scallops, miso foam, bok choy and sweet peas.
